Chinese tonight at a restaurant we haven't been to before - I had Mar Far Chicken, Pork Fried Rice and Mongolian Beef. Sort of standard fare but delicious! And we have leftovers!

Turkey casserole. I found a very basic recipe online and will tweak it a little to add what we have and most importantly what the family will like. How did it turn out? Really good thanks. It stated out as a Tetrezzini that I added veg to plus a can of French fried onions guaranteeing that my kid would eat it.

I forgot the peas - darn. I made the tuna casserole. It turned out okay, but I used low salt Cream of Mushroom soup and it needed flavor. I cut up some bread cubes and dried them in the oven (low heat) then tossed them with melted butter and spooned over the casserole with 5 cooking minutes to go. I also uncovered the bowl so they would crisp. Next time I'll make sure the cubes are crushed down to crumbs after I dry them out - they were too big and were like crunchy toast. Amazingly, I cooked the noodles to perfection and on the initial boil up, only boiled over once.

Hmm, I don't even know what to call tonight's meal. I had found the recipe years ago in a microwave cookbook. It is basically all done in the microwave. Melt some butter, season if you wish but I use salted butter. Coat chicken breasts on both sides in the butter. Cook a few minutes on each side. Add sliced mushrooms. Cook a few minutes. Add French Fried onion rings. Cook a minute or two more. Then top with Swiss cheese and cook 2 more minutes or so. The times are approximate. Basically you just need to make sure the chicken is thoroughly cooked. I had a plethora of Swiss cheese in the fridge and remembered this recipe from so long ago. Yummy!

The building had their Christmas party yesterday and Boston Market catered a turkey dinner. Tender breast turkey, mashed potatoes and gravy along with scrumptious dressing. Then a slice of fabulous apple pie. It was all so good and the first time I'd tasted anything from Boston Market.
