They were marinated wild caught Alaskan salmon from Costco. I usually grill them but they tend to flare up the grill so I decided to bake them at 350 degrees with foil on top and they turned out well.

Roasted pork and potatoes. And I think roasted corn from Trader Joe's. Our cold house feels much warmer with the oven cooking our dinner. It smells so good! I plan to work on less meat proteins in the near future.

I am having an improvised vegetarian dish that tastes like fruit loops for reasons known but to god---black olives, onions, baby bella shrooms, brown rice and quinoa all tossed in olive oil.

Going to a wedding and the reception menu is Italian. This girl decided to have an outdoor wedding and it is freezing cold here and the wind is outrageous. We had a cold front and storms come through last night and had some snow this morning.

Wow nennie, mid January sounds crazy for an outdoor reception. I am assuming there is a large tent with heaters. Hope you can enjoy the reception! There was a sale on chicken thighs and drumsticks. I made 2, 10 x 13inch pans of chicken cacciatore. Delivered some to my dad with beef barley soup made this afternoon.

I'm roasting again - such a winter friendly type of cooking and so easy! Chicken breasts and a cut-up sweet potato this time, glazed with oil and a mix of salt, pepper, smoked paprika and some seasoning mixes from Trader Joe's. And a bit of turmeric. It smells great while it's cooking!
