Tonight, I am thinking of roasting one of those frozen turkey breasts that come in a bag. I have never had one before, and it looked both good, and easy to prepare.

A friend gave my husband an elk steak quite a while ago. We finally took it out of the freezer and grilled it. I've never had elk before but it was pretty good? Very lean. In addition we had steamed Yukon gold potatoes and kale super salad from Costco.

Chicken tacos - keeping it simple tonight. What are the other ingredients in the tacos? I used grilled cut up cooked chicken and onions that I heated up in an iron skillet. Corn tortillas, pepperjack cheese, guacamole and the odd ball addition is the kale supersalad from Costco. I love that stuff. If I didn't have it I would use lettuce or sliced cabbage. It's a very quick meal that I could eat every single day! My version of comfort food.

DH and I went to an Italian food market so close to where we live..picked up a artichoke marinara (from chef Lidia Bastianich) and mezze maniche rigate (pasta)..we are going to add ground turkey with it and have side salads....yum! Can't wait..

I reinterpreted this soup recipe, a Gingery Bok Choy Soup. I used leftover rice and pork loin instead of the noodles and ground pork. The bok choy, scallions and garlic were all fresh from my garden. It tasted great!

Since I still have loads of bok choy from my garden, I again reinterpreted this soup recipe, a Gingery Pork Bok Choy Soup. I used leftover grilled pork loin and rice noodles. The scallions and garlic were also from my garden. I threw in some fresh pea pods for good measure. I used low fat beef stock because I had some on hand. It worked well.
