I love it when one of my experiments ends up being really great! I had a flat of pork loin chops I'd gotten for a steal from the "dead meat" bin (my brother's name for the sale bin) at the grocery store. These things are huge. The smallest one was over 5 oz. I cubed it up and browned it with some mushrooms and seasoned it with Penzey's Tsardust Memories, which is a blend of salt, pepper, garlic, marjoram, cinnamon and nutmeg. Then I roasted a cubed sweet potato and added it to the pork and mushrooms to blend the flavors. I also had a side of sauteed green beans. OMG, that pork was amazing. That spice blend is SO good and it smells incredible. I'm totally using it the next time I make beef stew.
I wrapped and froze the rest of the chops, but I think I'll be getting another one out tomorrow night!

Thick slab of beefsteak tomato, cooked briefly in bacon fat and then covered with bacon strips, and topped with a smear of avocado oil mayonnaise and a scrambled egg.

It's been so warm & even hot out for quite a while here. My house really holds heat, so using the oven has been out of the question. This week the weather took a drastic turn. Supposed to be a high in the mid 50's. Because of this I decided to make a nice big Pork Loin Roast. I can't wait. I plan to have Riced Cauliflower with it with gravy instead of potatoes or rice. I also have some Snap Peas I plan to steam. Plus, the leftovers this week will be great.

Whole Foods was carrying organic corn on the cob again, so I'm having an indoor picnic all weekend, along with bunless hamburg, cauliflower "mashed potato", and homemade coleslaw.

I had some chicken thighs in the freezer needing to be dealt with and a few too many gigantic sweet potatoes. I adapted a slow cooker recipe for North African beef stew with the chicken and the sweet potato taking the place of 3 lbs of stew beef. I also had some dried apricots, although no golden raisins, which are also in the recipe. It's got carrots, onions, garlic and garbanzo beans and is seasoned with salt, pepper, cinnamon, paprika and cumin. If it tastes bad (worried the chicken is a bit old), at least my house smells good - I'll have made food potpourri I guess I can always just pull the chicken out.

I'm ordering Thai food because I'm just so tired. Well, yeah, what with celebrating your birthday and all, LOL. Good time to indulge yourself! edited to say I just read about your mom's passing. You have been looking after her for so long and it hasn't been easy for you. Please take care of yourself during this transition. We're all so proud of you. (((hugs)))

That sounds good, Critical. How was it? It turned out really well! I was just worried that the chicken might taste a little stale, but all that seasoning - I also browned if before adding it to the crock - did the trick and it tasted just fine. Sweet potatoes get really soft in the slow cooker and I love that. I know some don't. I'll post the original recipe in the Recipes thread in case anyone is interested. It's really one of my favorite slow cooker recipes. Anyone who's bought a slow cooker cookbook knows how many variations of the same old beef stew recipe there are. This one is totally different.

I'm re-heating a pork loin that I made Sunday night. I'm making a point to eat and go to the gym. I'm trying to to use my mom as an excuse to drink beer and eat pizza which is want I really want to do!

I couldn't wait for cooler weather. I made a crock pot full of stuffed pepper soup and dumplings. It didn't go along with the Labor Day hot dogs and hamburgers, but I didn't care. I made it anyway.

I put some Elk Steaks cut up in the crockpot with onions, garlic, tricolor peppers & barbecue sauce and a little mustard. It's cooking now & smells so darned good. I have some spinach noodles in the cupboard I plan to serve it over and some leftover snap peas I'll reheat. This will feed me for days. I like that.
