Oatmeal topped with blueberries, walnuts and a fancy maple syrup.
I picked the blueberries with my daughter on a road trip to Hood River (in Oregon) this past summer.
In the fall I visited a friend in Northern California and picked the walnuts at her place.
Both were wonderful trips and this breakfast brings memories with it!

I had a sandwich that I recently discovered at Panera. It's ham, egg and cheese on a cinnamon crunch bagel only I get it on an asiago bagel without cheese (it's too rich with it). It's really good!

I'm sharing because this was so delicious. I found it on IG.
I put some crumbled feta in a little ring in a small skillet, when it was starting to melt, I cracked an egg into the center, added pepper and a pinch of red pepper flakes and then covered to cook (no salt needed because of the feta). Then I browned a whole grain tortilla (like a soft taco size) a little. I smashed half an avocado on the tortilla and then added the cheese and egg. Ate it like a soft taco. AMAZING. That's definitely going into the regular rotation. It was yummy, easy, and pretty quick to make.
