I finally thawed out the ham bone from my Thanksgiving ham and made bean soup. This soup is from a mix made by a woman I do events with. It's got green peas, barley, and pretty much ALL of the beans, along with seasoning. All I added was onion, celery and carrots, along with the ham bone. I may end up freezing some of it because it makes a massive amount of food and I might get tired of it in a few days. My slow cooker was full up to the rim!

I ended up with a 24-pack of ramen noodles (don't ask), so I've been looking for recipes. Last night, I did a sesame peanut recipe, but it was too peanut-y. The noodles soak up a lot of flavor and it was too much. Tonight, I made the Viral Tik Tok Ramen recipe that I didn't know was viral until Google told me. It was fantastic. I used gochujang instead of red pepper flakes and added some hoisin. I also didn't have the bagel seasoning, which isn't my favorite anyway. I cooked up chicken and green beans in the sauce before adding the noodles. Also, I forgot the egg (literally just realized that now). Considering how pricey eggs are, that was probably a good thing!
I'm not going to be having ramen noodles every night - more like once a week - but I wanted to find a few recipes I could whip up when I didn't feel like cooking. This one was really quick.
Kao - I'd love the gochujang chicken and broccoli recipe! Gochujang is quickly becoming one of my favorite seasonings.

Here ya go, Critical! Replace the chicken breasts with boneless skinless chicken thighs and it's golden. I also do the alternative preparation with the broccoli where you bake it in the stove with minced garlic and sesame oil. Coconut-Gochujang Glazed Chicken With Broccoli- 2 tablespoons canola oil - 1½ pounds boneless, skinless chicken breasts, cut into 1½-inch pieces - Kosher salt and black pepper - 1(2-inch) piece fresh ginger, peeled and cut into matchsticks (about ⅓ cup) - ½ cup unsweetened coconut milk - 3 tablespoons turbinado sugar or 1 tablespoons light brown sugar - 2 tablespoons gochujang paste - 2 tablespoons low-sodium soy sauce - 1 tablespoon fish sauce - 1 pound broccoli florets, cut into 2-inch pieces - Garlic (either chopped or crushed) - Cooked rice, for serving - Sliced scallions, peanuts, or chopped fresh cilantro, for garnish 1. Step 1
: In a large nonstick skillet, heat oil over medium-high. Season chicken with salt and pepper and cook, stirring occasionally, until golden all over, about 3 minutes. Add ginger and cook, stirring occasionally, until softened, about 2 minutes. 2. Step 2
: Add coconut milk, sugar, fish sauce gochujang and soy sauce and bring to a simmer, stirring until gochujang dissolves. Gently simmer over medium-low heat, stirring, until chicken is cooked through, about 5 minutes. 3. Step 3
: Meanwhile, in a saucepan of salted boiling water, blanch broccoli until crisp-tender, 2 minutes. Drain. Alternatively, you can roast the broccoli with garlic with a drizzle of sesame oil at 450 for 11 minutes. 4. Step 4:
Divide chicken and broccoli among plates; spoon with sauce. Add peanuts on top. Serve with rice.

I made a casserole with broccoli and chicken with a cheese sauce. And made rice on the side. My guys seemed to like it as most of it is gone...It smelled great while cooking/baking it! As I am watching my diet, I just ate a small amount but enjoyed it, too!

It was overcast and cold today so I made the Smoky Chipotle Cassoulet again, lol. I'm picking up chicken thighs this week so I can make it again! I bought a small bottle of orange juice when I made it a few weeks ago and I had about half the bottle left. I put it in the freezer to save it for next time (I can't drink oj - it upsets my stomach). It's such an easy recipe and SO good.
I was working in the studio and lost track of time, so I needed a quick dinner tonight. I adapted the ramen recipe I posted upthread. I made it with a little boneless pork chop and some green beans. I cooked them both in the sauce while the noodles were boiling and then added in the noodles, tossed them in the sauce and it was done. Took maybe 10 minutes total.
