Sloppy Joes. I wish I had some salmon, that sounds good! I know! I felt the same way when I read the updates for today!
We had some turkey chili that I had tucked away in the freezer. Over steamed red potatoes. Comfort food! We are both feeling a little bit down right now. Covid weary.

Soup made with turkey broth, Italian turkey sausage, tomato sauce, Swiss chard, carrots and seasonings...it was tasty! The Swiss chard was from a winter crop in my garden.

I did some pork loin chops in the slow cooker with fresh mushrooms, onions and a bit of processed goodness - cream of mushroom soup AND dried onion soup mix. I will be eating it until at least the middle of the week over egg noodles with some steamed broccoli. The chops had been taking up room in the freezer, so it was nice to clear a bit of space.

Since I do something similar to Cootie's soup.....I guess you could add spinach at the very end, but spinach generally disappears in soup - the leaves are so thin that it breaks down to nothing pretty quickly. My mom and I jokingly refer to it as "algae."
You're better off with a green that has thicker leaves. Since I'm not lucky enough to have fresh Swiss chard like Cootie, I use kale in mine. I give it about a minute in the microwave (in my microwave steamer) and add it during the last 20 minutes or so. I holds up nicely in leftovers too. I like buying whole bunches of kale vs. a bag of chopped kale, which I've found to have too many thick stems that take forever to soften. It's easy enough to tear up the leaves by hand.

However, Swiss chard has stems that are cooked a little longer than the leaves and they impart color, texture and flavor to the dish that spinach and Swiss chard leaves lack. That soup was really good!
