We were supposed to have Turkey Piccata but when I grabbed the jar of capers out of the pantry, I realized that it was open/not-sealed and I'd just bought it. So instead we had Turkey Scallopine and talked about how the difference between the two is just capers. And we had spaghetti squash instead of pasta. I wish I had my young metabolism so I could eat whatever I want and not gain weight!
It's going to hit 105º by the weekend here, so I think I need to stock up on salad fixings! It's cool-ish tonight, so I'm roasting some chopped red potatoes. I'm sauteing a chicken Italian sausage with a bunch of kale. Once the potatoes are nice and crispy, I'll add them to the pan with the sausage and kale and some red pepper flakes.
By the weekend, I'm not even going to want to use the microwave! It'll be all juice bars and raw produce!
That sound so good! I'm the only one around here who will eat sauteed kale without causing a fuss, so I'll just have to dream about your dinner!

I'm having a variation of this dish tonight and used green beans instead of kale. It's really less a recipe than a few ingredients thrown together. I always use some sort of sausage, a green vegetable - usually kale or green beans - and a starch. I've used butternut squash (my favorite, but it's a lot of prep work), sweet potatoes and regular white potatoes. I like the spicy sausage, but if I end up with the sweet stuff, I add some red pepper flakes. It's generally just seasoned with salt, pepper and garlic. Super simple. Maybe your family would be okay with green beans? I've used fresh steamed and frozen. The green beans do seem to pair best with the white potatoes.
Years ago in NYC, I bought a side dish of thinly sliced, roasted potatoes and really nice French green beans at Zabar's. I was simple, but so good. I think that's probably where this ^^^ dish came from.
Today's my birthday, and I'm going out with my partner for good Poke and a Spiderman taco (Fried soft shell crab, sushi rice, crab salad, cucumber, green onion, sesame seed, soy glazed sauce, spicy mayo, onion maple sauce) at one of my fav restaurants! Yay!
