I'm not sure at this point. I keep looking at what you all are making to try and get some ideas! Maybe chicken enchiladas?
Update - I made a chicken enchilada casserole with black beans, green enchilada sauce, Rotel diced tomatoes and peppers and a light amount of cheese. It's almost done and I'm really looking forward to it as is my husband. It'll be our entertainment for tonight!

I've gotten really into what I call "mug omelettes," although it's more like a scramble. Eggs, chopped up turkey breakfast sausage, a sliced cheese stick and some diced roasted potatoes (I roast a bunch and then store them in the fridge). Done in under 3 minutes in the microwave and no pan to wash! I ended up with some very ripe avocados, so I'll put half of one on top.

Online Grocer sent me the large size of Stouffers meat loaf dinner so after I cook it up I'm going to slice it up for sandwiches - hopefully two servings worth. Unfortunately, mashed potatoes will go bye-bye.

I often cook large batches of stuff & freeze the leftovers in generous single serve containers. Tonight I got out Spaghetti with meat & lots of other tasty vegetable additions.

I put a chicken breast in my crockpot this morning, then around supper time I took it out & shredded it with 2 forks. I've never done this before. It was much easier than I expected & I got more shredded chicken out of 1 breast piece than I expected. Then I put it in a tortilla with tricolor peppers, onion, peas & cheddar cheese & microwaved it to heat it. Served it with seasoned riced cauliflower. Plus, I have leftovers.
