Tonight was just Cream Of Wheat.... (fighting a cold)....but tomorrow I hope to make a stop at the store to get all the ingredients for some good old-fashioned slow cooker chicken soup. It's cold and raining at the moment so it's homemade soup type weather.

Oh Cootie!!! That sounds incredible. It was tasty! I had a piece for breakfast and it was even better! I'll be making another one soon. We have loads of tomatoes even after I made and canned salsa today. It's been a banner year for tomatoes!

I'm torn. I bought the ingredients for (1) chicken noodle soup (2) chicken paprikash soup and (3) Olive Garden's chicken gnocchi soup. I don't know which to make. I want them all.

Roast, mashed potatoes and gravy. Birthday dinner! Any cake? We celebrated with cake and a meal sunday. My grandson and I share the same birthday and my nephews is the 17th so we have one big party. I made dinner for my husband and me and shared it with my sister. My sister would cook for me but I am the better cook....lol.

It's really good, and healthy. You omit the pasta noodles, and just layer the zucchini with the rest of your lasagna ingredients.

Made a pepper steak stir fry for the first time and have to say it was delish. Instead of flank steak, I used leftover London Broil sliced very thin. Also used frozen pepper strips which made it a lot easier and threw in some diced tomatoes as well. Recipe called for cornstarch which I did not have, so I substituted flour. I served it over rice. Yummy!

I keep thinking of that tomato tart Cootie!! I only had a salad today so I'm making chili. Chili sounds fantastic! The weather got a little cooler today and it made me think of all kinds of new dinner dishes I haven't had since last winter.
I had Beef Cabbage Rolls from Trader Joe's tonight. I added some fresh tomato sauce that was leftover from canning 5 pints a couple of days ago and the sauce made the dish so much better.

When I made zucchini lasagna in the 70's I did it with slices rather than strips. I included ground beef and cheese - no tomato sauce or other liquid so the zucchini liquid was the moistener.

You soak the zucchini slices in salt for about 15 minutes before you assemble the casserole. This draws a lot of the water out of the zucchini. Then, you blot it dry with paper towels. Another thing I think that helps, is using a thicker spaghetti sauce, like Prego. It's naturally a runnier consistency than when you make it with pasta lasagna noodles, but we prefer the zucchini version.

When I do zucchini noodles in a sauce, I simmer the sauce until it's pretty much dry and then add the noodles. They release water, reconstitute the sauce and it's not runny. A friend of mine did a casserole similar to lasagna and subbed in zucchini for the pasta and she didn't do anything with the zucchini ahead of time. She ended up with a soupy mess. She said it tasted good, but no one else would eat it!
Sort of reminds me of the time a friend made a veggie quiche and was surprised it didn't set up properly. She had used, among other things, mushrooms and zucchini and just put them in raw. I had to explain the problem
