Ropa Veja. (I ordeed, I did not make it) I had to look that up - looks delicious!
In the oven right now: Chicken enchilada casserole with queso fresco, poblano, Anaheim and jalapeno peppers. It's based on a recipe by my childhood neighbor who was from Mexico City. She served it to us every other Christmas Eve when we were invited over for many years. But she didn't put those peppers in.

And??? you did what with it? Don't leave me hanging, Fanny, did you broil it or bake it? My Great Plates meal was a turkey sandwich (I used half the turkey, saved the remainder) and made my own toasted bread/mayo sandwich. Along with that was a very small tub of potato salad. They use small red potatoes and it is so good...that and a chocolate brownie square - I'm stuffed.

New to me recipe tonight - "One-pot Chicken Thighs with Black Beans, Rice and Chilies" - although I'll be using drumsticks . Not sure how those will work. I haven't bought drumsticks in years but they were out of organic thighs at Costco so I went with those.

I sometimes have trouble opening up NYT-Cooking recipes but this link opened without having a subscription. See my note at the bottom about cutting the recipe in half if you don't have a 12" skillet.

Those of us who have been participating in the Meals on Wheels Great Plate program received email notice today that the program is "at capacity" and will be discontinued on 11/30. No deliveries as of 12/1. I'll actually miss the salads. I had a garden salad with the chicken sandwich tonight.
