Vegan Ginger Sesame Noodles with Crispy Tofu from the Minimalist Baker. LOVED the tofu and veggies, but hated the noodles - buckwheat and brown rice soba. Totally flavorless and gummy. I'll be eating the leftovers with other noodles, probably ramen. I will say that grating a whole Tbsp of ginger is a PITA. I'll be using jarred minced ginger from now on.

Thanks for the review on this recipe! My husband has been trying out different stir fry recipes and his flavors are usually good but he gets mixed results from various noodles. I only eat the wheat free types so don't always try his food but enjoy smelling it as it cooks! As far as ginger goes, we keep ours in the freezer and use a microplane which makes it pretty easy. The ginger is so fine that it distributes nicely through the dish.
Our dinner tonight won't be Easter food at all - due to our expected refrigerator delivery yesterday I don't have many options to cook. We're having pulled pork over rice and a green salad. No dessert is planned but if I get energetic I may make an apple pie?

Cootie, Iβve normally had good luck with gluten free noodles, but these were terrible. I just got buckwheat soba because thatβs one of the options the recipe gave. For me, it was about the tofu and the veggies and not the noodles. It was weird that the recipe name leads with βginger sesame noodles,β but all you do with the noodles is put them in a bowl and top them with the tofu and veggies. IMO, it would be just as good with brown rice. Iβve got a ceramic ginger grater, but Iβve never had a recipe that called for a whole tablespoon of it.

I had leftovers of the tofu and veggie dish I made last night. This time, I used plain old ramen noodles. I made up some more sauces to heat up the tofu and veggies with and then added the cooked noodles, added a little ginger and sesame oil to the noodles, tossed everything up and it was great. These noodles were much better than the ones I had last night. Those were like if they made noodles out of wallpaper paste. Reminded me of the very early days of gluten free pasta, before they figured out how to make it taste good!
I'll definitely make the recipe again and maybe next time I'll use brown rice instead of noodles.

I've got a double batch of Smoky Chipotle Cassoulet in the slow cooker. Or, rather, almost a double batch - I doubled everything else, but only had 1/5 lbs of chicken thighs. Gonna have it over brown rice to stretch the recipe even more.

It was wonderful to smell the aroma of fresh cut vegetables, then the cooking, then eating our meal! It was delicious, too! Mr. C likes my cooking and is great at doing dishes at the end of our meals because he appreciates my efforts, too. But I got tonight off entirely which I loved.
Your dinners always spell comfort to me. The pork chops, etc would go over well in my house. Especially with applesauce as a side. I never think to do that.
