Did a lot of cooking today: beef barley soup, a big pot of vegetarian chili for my son, and a recipe I found on Facebook for a stuffed chicken breast primavera. Tonight we had the chicken and tomorrow we will have the soup. I always freeze at least one container for my in-laws, who enjoy soup a lot.
I'm not hosting Thanksgiving this year but my husband's brother and his family and my family are headed to the in-laws. Since my in-laws are 88 and 93, we are doing all of the cooking. I'm making a Tofurkey roast for the 4 vegetarian family members, green bean casserole, spinach dip appetizer and baking. I have already made the pumpkin bread and just finished with the apple pie. I have one more apple pie to go.
Some of my Christmas baking done over the last 2 weeks or so. I've given quite a bit away and right now there is no room in either freezer so I am waiting until later this week to finish up with more pignoli cookies and struffoli (honey balls). Left to right...pignoli cookies, pizzelle, and Russian Teacakes.
Left to right are peanut butter blossoms (currently in the freezer) and I have not yet made the struffoli (honey balls) and the decorated cookies we call "Grandma's cookies" after my late grandmother. Those last 2 are last years photos. The struffoli are a pain in the neck to make but everyone loves them.
I can't figure out how to post pictures but I got my peanut butter fudge and chocolate fudge made today. Made another batch of Texas Sheet Cake cookies. I sell my baked goods so I have to get pie crusts made for 4 pies.
Supper tonight was a ribeye steak broiled in the convection oven, mushrooms sauteed with butter and onions topped with sour cream, tiropitas, and sparkling red grape juice. I was going to have a baked potato with cheddar and sour cream but as I was fixing supper, I saw the tiropitas I had in the freezer. I had forgotten I had them and I've meant to fix them the last few nights so I decided to have them instead. I can have potatoes another time.
It was great and I had half of the steak and vegetables left over so I can make another meal from them!
My husband made it this time..but I usually pan sear it on the stove and put it in the oven for a few minutes. I add the usual salt and pepper...and lots of lemon.
Aha, very simply prepared. My husband and I are one of those rare birds who do not like black pepper. We always cook ours on the grill outside in a foil pouch b/c I hate the house having a fishy smell.

In the kitchen at 7 which is way early for me. Baked 2 apple pies, one for us and one to take to the in- laws. Then I made a Quiche Lorraine. I've a smoked ham cooking and have made egg salad, tuna salad, and macaroni salad. There will be lots of leftovers for my in-laws.
