Hmm. You could make a fancy grilled cheese with white American. I'd layer the cheese on a good bread with some thinly sliced pears and maybe some arugula.

I thought I bought a package of sliced white cheddar.....but it was actually sliced White American. WHY is that even a thing? American is the worst cheese ever, but I have to find a way to eat it, since I can't afford to just dump it. UGH. I like it if it's the real stuff from the deli. I love it on a grilled cheese or as a protein in salads. If it's the individually wrapped slices...ugh no.

Some places around here make Philly cheesesteak sandwiches with American cheese instead of provolone so you could try that, or mix the two cheeses.

Sorry guys, but mac and cheese and Philly cheese steaks sound like a punishment. I just don't eat those things anymore. I found that the American cheese isn't quite as bad if I just roll a bit of it up in some sliced turkey. I'm definitely not going to ruin one of my veggie burgers with it! It'll probably take me a while to finish, but at least that stuff lasts forever.

I have so much parsley and thyme this year. Lesser amounts of basil. I spent much of yesterday making pesto. This is the first year doing pesto and I'm enjoying learning that it can take on so many combinations and can go on anything. The goal is to have homemade pesto occasionally this winter so I froze small amounts. I ended up with a slurry of parsley, basil, thyme, EVOO, gruyere cheese, avocado, garlic, and lemon juice. (No nuts because of the excessive Omega 6 of all of them. I don't completely avoid nuts but I'm very careful how much of which ones I eat.) I'm off wheat products for the moment, so last evening I mixed it into some sautéed Whole Foods spiralized beets but I have also been slathering it on fish. Most of the time involved was stripping leaves. I have been looking for ways to include healing herbs on a more bulk basis than the occasional sprig and pesto seemed like a good solution. I should grow rosemary next year.

I used to have a forest of Basil on my window sill. I think some of it was 2 feet tall at one point I haven't grown herbs in a while though. I felt like I was always wasting it when I wouldn't use it (which is dumb, I know). I've started sprinkling turmeric on things before I eat it, mostly leftover chicken. It gives my food a distinct flavor that's really not that appetizing, but I've heard turmeric is really good for you so....

Turmeric is poorly absorbed unless you include something like a lot of black pepper. At heart it's curry, which also needs a lot of black pepper for the same reason. I don't like curry or pepper and I'm certainly not willing to eat it every day, so my solution is a daily turmeric supplement.

I put turmeric on roasted veggies, especially cauliflower. Add some curry powder and you probably wouldn't taste the turmeric. I do that because I like curry powder, but you could probably substitute another more strongly-flavored spice with the same effect. I don't know that I ever really noticed the flavor of turmeric. I used to take turmeric supplements, but then someone told me that your body doesn't absorb it if you take it via supplements.

It's the same situation for either a supplement or as a food that you need to make it more bioavailable. Piperine (black pepper) is a common additive to the supplement but there are other ways of doing it.

I had lunch there yesterday and they just handed me a fairly large loaf of sourdough. You just show them your rewards program number. I think you also get points for purchases that can be redeemed AND they give you some sort of treat for your birthday. I was surprised that it was actually a good sized loaf of bread. I was expecting one of the little bread bowls, which would have been okay too because, FREE. Ah, maybe they consider the Disney location a specialty restaurant, so it's not listed on their regular locations page? I can't imagine anyone forking over a mountain of cash for admission just to go to Boudin's. The bread isn't THAT good! I didn't use their search function: I just went to the locations page. They don't have a TON of locations, but it's a short enough list. Not like scrolling through a list of Chipotle locations or something I just went and tried the search function and it worked for me. Weird. It showed the location closest to my hometown at the top and then all of the rest in order of distance from that location. There's a location in my hometown. I need to remind my mom about that so she can go pick up some bread. She's gluten-free, but my dad isn't and he loves their sourdough. They do a nice lunch too. I had a really good chicken salad sandwich with a side salad. My friend had avocado toast that looked really good. Sadly, not all the locations, including the one near my parents, serve breakfast. My dad LOVES breakfast and they go every Sunday. The one near me does have breakfast, so I think I just found a new breakfast spot for when they visit!

Yuck. I didn't know I was getting a side order of Roundup with my oatmeal. I won't be buying Quaker anymore...the grocery store I usually go to doesn't carry organic oats, I'll have to look elsewhere. Try to eat healthy and you're still getting dosed with chemicals, I swear... Roundup Weed Killer Chemical Found in Cheerios and Quaker Oats

And two of the pills I've been taking to regulate my health are laced with carcinogens (valsartin and levothyroxin). I'm also going to eat my beloved Shredded Wheat and Bran every other day (switching off with Corn Flakes)as my potassium level is inching upward.
Geez...between food and medicine one is totally screwed.

The non-organic foods with the most glyphosate are OWL - oats, wheat and legumes (beans, peas, etc.). Whole wheat is even worse than non-WW because the outer hull is preserved in the food. There is probably glyphosate in almost all our food, and hopefully only in trace amounts in organic foods. And because there are so many glyphosate resistant weeds now, many farmers are turning to combinations of glyphosate plus something else, like toxic dicamba. It's in our water, too, and those who live in the Midwest or downwind of other glyphosate intensive crops are breathing it.
Glyphosate, among other things, is antimicrobial. So it screws up our gut microbiome and potentially our mitochondria. Two things we need healthy for good health.
As of this past June, I'm helping my sister afford to eat really well. She was scraping the barrel, not getting the nutrients she needed and consuming a lot of toxins. She was severely depressed and anxious. 8 weeks later and she is vastly improved. "Feeling good"!! She has even been able to go off 3/4 of her antidepressants (with her doctor's blessing), and I'm hopeful she can get that down to zero. I told her it didn't matter what drugs she was on (which never worked very well anyway and had horrible side effects) unless her gut was healthy, and that glyphosate was one of the things she had to avoid for her gut to flourish.

In more food news, I found a new cauliflower rice mix that has broccoli, edamame and onion in it. So good...especially with the Trader Joes Honey Walnut Shrimp.

A question about riced cauliflower sold at the supermarket. How does it compare to cauliflower you would rice yourself? Is it much drier? I rice with a cheese grater and can't manage to do it without knicking my fingers. Thanks!

I've never had homemade riced cauliflower, but what I buy is a nice inbetween moist and dry. The texture is pretty much like rice.

I use my food processor to rice my cauliflower. Just make sure to not over do it. Use the pulse button. I do buy riced cauliflower from time to time.

My partner found a pizza for me that I can actually eat!
It's by a company called RealGood Foods, and they make 3 different types of pizza. They are Gluten free, extremely low in carbs and sugar, and high in protein! He bought me a Supreme 5 inch Chicken crust pizza to try, and I will report back once I eat it to let you guys know how tasty (or not) it is.

The Real Good Foods ingredients are intriguing! They also have a cauliflower-based pizza crust which is something you can do at home too with whatever toppings you prefer.

Has anyone tried those cauliflower crust frozen pizzas? I saw several brands of them in the grocery yesterday, and bought a veggie one. It's supposedly made with a cauliflower crust. It does sound healthier.

Other than that, it was absolutely delicious, and I'm pleased that it's high protein while being low in carbs and sugar. I had the Supreme but would like to try the other flavors as well. Cloud bread! I had never heard about this before. Kao, we need to try it! There are even recipes incorporating avocado. I'm exploring how far I can push avoiding wheat altogether and this looks intriguing. Because I don't want a sandwich wrapped in Romaine lettuce.

Cloud Bread looks fascinating. Even I could bake it. But, it's said to be too light to make actual sandwiches. One site says to wrap in plastic overnight gives the rounds more elasticity like real bread. Cloud BreadIn the actual recipe there is also a tblspoon of white sugar. Not much it appears...just enough to give it some flavor and balance the cream cheese.
