Looking for suggestions for an easy recipe for a boneless leg of lamb. I've never cooked one, as I'm not that crazy about lamb. Every once in a while I will buy lamb chops and grill them, or broil in the oven. I do know that I dislike mint jelly. I've had that before. Thanks in advance. We always have mint sauce, it brings out the flavor of the lamb, and isn't sweet like that awful jelly.We usually have roast lamb with roast potatoes. Love it!

Eastcoastmom, we used to do boneless leg of lamb for Christmas Eve and got it from the local butcher, who would do a dry rub with it. It was excellent. Maybe check out various dry rub recipes online. They're fairly easy and can give a lot of flavor. I don't like mint with meat either.

I'm not a vegan, but I came across a recipe for Vegan Mushroom Étouffée on the NYT I think I'm going to try! It uses oyster mushrooms for a meaty flavor, and seeems to be pretty straightforward.

Heads up! Target has their 99¢/lb spiral cut hams back in stock for Easter! These are the hickory smoked ones (vs. honey baked) and they are excellent. The one I got today is 9.9 lbs and cost $9.70. I'm planning to cut it up and parcel it out in recipe-sized packets, to freeze. I'm going to get dozens of meals out of this thing!

So.....(see post above).....anyone have any ham recipes? I cut up and froze the ham I bought and, while I do have a few soup recipes, I think I'm going to get sick of pea soup and bean soup before this ham is eaten. Luckily, it freezes really well, although not forever. I did leave a hunk of the ham in the fridge and I'll probably just do ham and eggs, but it would be nice to try something new.

You could do a quiche with ham in it. How about ham, egg and cheese biscuits for breakfast. Have you ever tried deviled ham salad. southernbite.com/deviled-ham/
