I've always hated artificial sweeteners but now that I'm prediabetic and watching my carbs, I've had to embrace them. I'm grateful that we have much better sugar alternatives now than were available when I was a kid!
I've been finding all kinds of zero sugar and low carb products--Dr. Pepper Zero, Hersey's Syrup Zero Sugar, Smuckers Sugar Free Breakfast Syrup, etc. I've ordered a high protein/carb cereal and can't wait to try it. If it's good, the same company also makes hot cereal and other snacks.

Is there anything that smells as delicious as strawberry jam cooking on the stove? Well, maybe chocolate cake. Still, fresh jam is up there. Went strawberry picking the other day and of course I brought home too many, so I've got a small batch of jam going now. The whole house smells divine.

Is anyone else living in a state with food waste laws? My property just got our new food waste bin about a month ago and it has been an adjustment. I'll admit, I was pretty annoyed when that bin showed up. I try not to waste much, but I still have banana peels and tea bags that can't go in the regular trash now. I bought a roll of compostable plastic bags and keep one in the freezer to put any waste in - mainly the aforementioned banana peels and tea bags. When it's full, I take it to the food waste bin.
I've also noticed that it's changed how I shop. I don't want to have to make that walk of shame to the dumpster with anything more than necessary! It's a good thing I went through that reorganizing phase and bought plastic bins for the fridge and freezer. Before this, I would have struggled to find space for that food scrap bag in the freezer.
In CA, you can get a food waste bucket for free, but it's (I think) 3 gallons and I don't know where I'd put the thing. I wish I could compost, but that's not feasible at the property where I live.
I'm curious how others are handling this change.

It'd be nice if they'd make it available to gardeners once composted...after Christmas here the recycling centers grind up all the old Christmas trees and you can go get all the free wood chip mulch you want. We don't have food waste laws here yet, but I save all my scraps for the compost tumbler in the back yard anyway. Anything the chickens won't eat goes in there.

I did a little reading and all I could find is that they'll be creating natural gas from the compostable waste. I don't know if, after that process, there's anything solid left and what will be done with it. It's definitely going to cut down on methane being released into the atmosphere from food waste in the regular dumps.
I wish I could just have a compost bin, but it would just be too close to our houses. This is an odd property in that there are no fences between the units (4 cottages - one is mine - a 4-plex and a duplex) and a band of green space behind the homes. Definitely not enough space for us to NOT smell the compost! I saw a really cool invention on Kickstarter that was a little composter that you could keep in your kitchen. It wasn't very big, but was still too big for me. Also, IIRC, it was around $300+. It sealed tightly, so you couldn't smell anything and it made a little batch of compost, which would be great to use in the garden. Alas, I lack the space AND the money, so I just use my little bags.
Arielflies, I know that it's not being rolled out all at once. My property got their bin - it's the size of one of the large residential trashcans (the ones with the handle and wheels) - about a month of so ago, but my parents in OC haven't gotten anything yet. They're not sure if it'll end up being a combination green waste and food waste bin. They already have a green waste bin. I don't know if there are green waste bins in my county, but on my property, the green waste (sadly) goes into the regular trash. Frankly, I don't know where a 4th bin would go.
This is the official site that explains how it'll be implemented. It seems like they're trying to consider lots of different living situations.
I was annoyed at first about have to deal with another receptacle/container in my house - I already have a recycle bin and a trash can - but just putting the little plastic bag in my freezer has worked well. I got a roll of 50 for $9.99 on Amazon and I find that I don't even use one per week. It's maybe every 10 days to 2 weeks, so the bags ended up being a pretty good deal. MUCH better than dealing with a bin that I have to empty AND (more importantly) wash out. Blech.
It's really forcing me to think about what I get each week as far as produce because I don't want to add to the waste. Plus, I don't want to waste money! If I throw anything out now, it feels like a failure.

In case anyone hasn't settled on their Thanksgiving menu, Target has a great deal on spiral cut ham. They're 99¢/lb. I got a nearly 12lb ham for under $12! I'm on my own for the holiday this year, since I've got a big art show that weekend and my parents aren't able to come. I didn't want to do a turkey - that's too much work - so I thought a ham would be easier than going out to pick up dinner, like I did last year. I don't remember exactly how much my carry out turkey dinner cost last year, but I'll bet it was around $20.
I ordered nearly everything today, except for the veggies, which I'll buy next week, thinking things might be easier to find now than in a week. I'll be able to take sandwiches with me for lunch at the event and then I can make a big pot of bean soup, so I won't have to cook while I'm prepping for my events in December.
I did my grocery order via Shipt this morning and my shopper said there were TWO hams left in the store, so they're a hot item right now!

I think it's just the season AND the sale price. Anyone trying to find a turkey OR a ham next week will have a hard time too. I decided to shop early so I didn't have to worry about it. I'm going to get cheesy potatoes or, if I can't find that, mac & cheese and then some green veg (Brussels sprouts or green beans) and I'll be all set. Got my pumpkin pie in the freezer already because that would definitely be hard to find next week!

I got a turkey at Sam's yesterday for $1.18 a lb. We don't eat much turkey I just like to have the broth from it for the dressing. My brother is smoking a ham which we like better. I will make all the pies and the sides. We seem here in Oklahoma right now to have plenty of turkeys they are just higher this year.

Due to my partner's recent diagnosis we've been leaning into low-sodium alternatives. I want to cook more for him now and have heavily been leaning on the NYT Cooking section for recipes, but I have a question for the more experienced cooks on the forum. I've recently become quite fond of miso-based recipes but even with the low sodium miso I'm concerned. There's a Miso Chicken recipe I want to try but it requires a half-cup of miso (which at 240 sodium per teaspoon is YIKES) that I already plan to cut down to 1/4 cup, but would the total sodium count be for each piece of chicken, or would the sodium be spread out throughout the entire dish? It requires 8 big chicken thighs. I apologize for asking what might be a basic question but I'm still relatively new to cooking new things.

Kao that sodium count should be for the whole dish, not per piece of chicken. So a 1/4 cup = 12 teaspoons, which would be 2880 mg of sodium for the whole dish.

Kao - if you're having to do low sodium cooking, have you tried Penzey's Spices? They have a lot of salt free spice blends that are very good. My dad got put on a low sodium diet a while back and my mom swears by some of those blends. Neither of them can have anything too spicy and my mom can't do much garlic either, so it's a challenge to make things that have no salt, garlic or heat and still have some flavor! Kao

I hate it when people tell you how to do whatever, as if the way you've been doing it all along is wrong. I'm 52 years old and have never had trouble eating a cupcake so my method works fine. There's really no right or wrong way, just different ways. I don't see how that way is better. Some cupcake are gooey on top or crumbly so it would be messier to separate them than to just leave them intact.

Looking for suggestions for an easy recipe for a boneless leg of lamb. I've never cooked one, as I'm not that crazy about lamb. Every once in a while I will buy lamb chops and grill them, or broil in the oven. I do know that I dislike mint jelly. I've had that before. Thanks in advance.

That's so funny, Critical, because that's the exact recipe I used. I didn't get any response by mid afternoon, so I had to Google. My husband gave it a 9/10 rating, but I couldn't eat it. I just don't like lamb, I guess. It always tastes gamey to me.

I never had lamb while growing up. I tried ground lamb and ground ostrich burgers once each when we had a grocery store that had exotic foods, but in that form, they weren't too different from beef or chicken. Now I just don't eat it because I don't currently have a taste for it so I don't feel a need to develop one. I'm fine sticking with chicken, turkey, beef and pork. I've had quail but I don't think I've eaten rabbit before. Quail are hardly worth it for the little tidbit of meat you get off them.

If I know about this, you all do too. There's maple-flavored Spam and It. Is. Good. It's only available a few places - Amazon and Walmart (which I will never shop at) and maybe one more. I ordered some from Amazon a few weeks ago. Had it cubed and browned with scrambled eggs. You do have to cook it to bring out the maple flavor. I was worried it was going to be super sweet, but it's not and it goes really well with the eggs. It's not an everyday meal, but nice for a treat.

I definitely don’t salt the eggs when I have them with this Spam (which actually is lower in sodium than the regular Spam).
